Each colour sits in its own pan, ready to pick up with a wet brush. Layering builds the colour towards opaque, and adding water thins it towards transparent, so one set covers both soft washes and fine detail. The colours also blend into each other. Underglaze is colour applied under the glaze, and these need a clear or coloured transparent glaze fired over them. That covering glaze is also what makes the surface food safe.
